This book evolved because two creative women wanted to share the recipes they had developed at Lapa Rios, a tropical rain forest ecolodge and 1,000-acre private nature preserve in the remote Osa Peninsula, Costa Rica. Although the recipe collection is location specific most of the listed ingredients are readily available at fresh produce markets and large grocery stores worldwide. A published collection of tasty recipes evolved into a greater goal.
Continuing requests from guests, friends and family insisted the story of the Lapa Rios development be told and its mission and history celebrated. Here, together with Katie Hennessy who remains an inspiration to all blessed by her culinary creativity, good food is melded with a few of my experiences designing and building Lapa Rios.
